BAKED BRIE IN PUFF PASTRY WITH APRICOTS
½ cup apricots
3 tablespoons crushed almonds
8 oz. French Brie, round
1 sheet puff pastry
½ cup cold water
2 to 3 tablespoons Grand Marnier
- Combine chopped apricots, Grand Marnier and water in a small saucepan. Simmer in pan until mushy. Add nuts.
- Slice Brie in half. Pour apricot mixture over bottom layer and place top half back on. Wrap in puff pastry. Make design on top to suit occasion with left-over pastry dough, and bake in a preheated 375 degree oven for 10-15 minutes or until golden. Make sure there are no wet spots on puff pastry and that it is golden over entire surface. Cool for 5 minutes and slice and serve with crackers.
